Pancakes with Cinnamon Apple Topping


An easy and tasty recipe for fall, these pancakes are warm and fluffy, topped with an apple and cinnamon sauce that makes a perfect breakfast or dessert for the cozy season of the year. They just happen to be vegan, but you wouldn't even know it! To make them even more healthy, replace white flour with any other type of flour you want, like spelt or almond. Also swap out white sugar for maple or date sugar for a lower glycemic index. Whatever combination, they'll make a warm and delicious addition to your table.

Pancakes with Cinnamon Apple Topping

Pancakes: 
1 cup + 1 Tbsp flour 
1 tsp baking powder 
2 Tbsp raw sugar 
1/3 cup plant milk 
1 tsp apple cider vinegar 
3 Tbsp apple sauce (unsweetened) 
1/2 tsp vanilla 

Cinnamon Apple Topping:
1 Tablespoons water 
2 Tablespoons coconut sugar 
3 firm apples, cut into chunks 
1 teaspoon lemon juice 
cinnamon and nutmeg, to taste


Start with the Cinnamon Apple Topping:

Place all the ingredients in a small saucepan. Heat over medium-low until apples have softened, about 15-20 mins. Cover to keep warm until ready to use.




For the pancakes:

Combine dry ingredients in a mixing bowl. Combine wet ingredients in a separate bowl. Then, combine wet into dry and stir until combined. Add 2 more milk or water if needed to make a pancake batter consistency.





In a lightly greased or nonstick pan on medium heat, add batter in 1/3 cup scoops to make little pancakes. Cook first side 2-3 mins. Turn when pancakes have formed a lot of bubbles on top. Cook 1-2 mins on other side or until they have cooked through and are lightly browned. 



Top with the cinnamon apples and whatever else you want! Some of our favorites are home made whipped cream or Greek yogurt, maple syrup and even a drizzle of peanut butter!
